Lime and Avocado Tacos


Cook 1 pound ground beef in medium skillet until browned. Add 1 tablespoon chili powder and 2 teaspoons each cumin and coriander; cook 30 seconds. Add 1 can of black beans to ground beef, heat thoroughly.

In a small skillet on medium heat, pour Lime Olive Oil so it covers the bottom of pan. Once oil heats up add one corn tortilla to pan. Fry each tortilla about 20 seconds on each side. Once fried, it is a good idea to remove excess oil from tortillas with a paper towel.

Cut open avocado and remove pit. Slice the avocado in strips. Remove the strips from the shell. Drizzle Lime Olive Oil over avocado strips and sprinkle with a pinch of sea salt.

Assemble tacos: fill tortilla with the cooked ground beef and black bean combination, top with onion, jalapeños, lettuce, cheese and a few avocado strips.
