1/2 lb. redskin potatoes, into half or quarter pieces
Garlic Olive Oil
1 tablespoon Basil
1 tablespoon Oregano
1 tablespoon parsley
Coarse salt and freshly ground pepper
In a medium bowl add the potatoes and drizzle in the olive oil to coat the potatoes, you may need to add more oil during the cooking process. Transfer potatoes to a medium skillet and sauté on medium heat. Add basil, oregano, parsley, salt and ground pepper, toss to coat. Add to frying pan and cover, stir occasionally.
