Servings Size: 4 – 2 tostadas per person
2 tbsp GLOOC Lime olive oil
8 corn tortillas
1 – 16oz can refried beans
1 – avocado
1/4 cup red onion – diced
1/4 cup lettuce, chopped finely
1 – small tomato – chopped
1/4 cup Mexican blend shredded cheese
1 lb ground beef
1 package favorite taco seasoning
In a medium pan, cook ground beef on medium high heat until browned and fully cooked about 5-10 minutes. Add in taco seasoning packet and stir until well combined.
In a small pan, add in Lime olive oil. Heat oil over high heat. Add corn tortilla one at a time. Cook tortilla for about 30 seconds then flip and cook second side for 30 seconds. Tortilla should come out crispy. Depending on the temperature of heat you may need to cook tortilla longer to get desired crispiness. Pat cooked tortilla with a paper towel to remove excess oil.
Place refried beans in a microwave safe bowl. Heat for 2-3 minutes.
Cut avocado into smaller sections and remove seed. Place in a bowl. Smash avocado to desired texture.
To create tostada, take crispy tortilla, spoon on a layer of refried beans, top with a layer of smashed avocado, spoon on ground beef. Top with onion, tomatoes and cheese and lettuce.
