Pumpkin Bread

1 can (15 oz) pumpkin (not pumpkin pie mix)

1 2/3 cups granulated sugar

2/3 cup your favorite Great Lakes Olive Oil non-infused olive oil

2 teaspoons vanilla

4 large eggs

3 cups all-purpose flour

2 teaspoons baking soda

1 teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground cloves

½ teaspoon baking powder

½ cup coarsely chopped nuts (optional)

Directions

 

1.    Move oven rack to low position so that top of the pan will be in the center of oven. Heat oven to 350 degrees. Grease bottoms only of 9 x 5-inch loaf pan.

2.    In large bowl, stir in pumpkin, sugar, olive oil, vanilla, and eggs until well mixed. Stir in remaining ingredients except for nuts, if used. Once fully combined, stir in nuts, if used. Pour into 9-inch pan.

3.    Bake loaf for 1 hour 10 minutes to 1 hour 20 minutes, or until toothpick inserted in center comes out clean.  Cool 10 minutes in pan.

4.    Remove from pan and allow to cool another 10 minutes before slicing.  

5.    Enjoy!
