1 cup cherry tomatoes, sliced in half
½ onion, diced
1 cup cucumber, diced
2 avocados, removed from peel and diced
2 oz feta cheese, leave a small portion set aside
¼ cup lemon olive oil
¼ cup lemon balsamic vinegar
Salt and pepper
Combine all ingredients in serving bowl (make sure you set a side a small portion of the feta cheese to sprinkle on top of recipe right before serving). Add salt and pepper to taste.
In a small mixing bowl combine olive oil and balsamic vinegar. Wisk together until well blended. Add salt and pepper to taste.
Drizzle oil and vinegar combination over the salad. You can use as much or as little of the oil and vinegar combination as you prefer. Toss to make sure salad is well coated.
Sprinkle the remaining feta cheese over salad right before serving.
