Chocolate Chip Muffins

Using Great Lakes Olive Oil Co.’s amazing olive oils and vinegars doesn’t have to be overly complicated. It can be as easy as substituting vegetable oil for olive oil! That is exactly what we did in this recipe. We used the Krusteaz Chocolate Chunk Muffin mix and replaced the vegetable oil with butter olive oil. It creates such a rich, creamy flavor while keeping the muffins nice and light. 



Heat oven to 400 degrees F. Line muffin pan with paper baking cups. 
Stir together muffin mix, water, muffin mix, and eggs until well blended. Pour into muffin cups, making sure mix is evenly distributed between all cups, filling approximately 2/3 full. 
Bake as directed on muffin mix box or until golden brown. Cool for 5 minutes before removing muffins from baking pan. 
Store cooled muffins in an air tight container.
